All the aspects of a “Bean to Cup” process were covered at this stage by experienced speakers including Kentaro Maruyama (Maruyama Coffee), Morten Wennersgaard (Nordic Approach), Gabriel Moreira (DaTerra Coffee) and Asli Yaman (Soyuz Coffee Roasting).

Farming, processing methods, Q-grading and everything connected with green coffee was discussed at The Lab. Green Bean Area. The stage also saw two championships: Russian Alternative Cuptasting Championship and Moscow Cuptasting Championship.
